I have a love for all things chocolate so any recipe with
chocolate in it sparks my interest. I just finished reading a book called The
Sweet Life in Paris by David Lebovitz which has lots of recipes for Parisian
pastries and other French food. He also has a blog about his life in Paris
(www.davidlebovitz.com) with many more exciting recipes! These mini cakes are
apparently called financiers because they were originally shaped like bars of
gold and were popular in the financial district in Paris...who really knows
what to believe. These turned out to be dense little chocolate cakes that were
a good snack!
90g butter
90g almond meal
25g cocoa powder
10g (1 tablespoon) flour
1/8 teaspoon salt
90g (¾ cup) icing sugar
1/3 cup egg whites (from about 3 eggs)
1 tablespoon milk/dark chocolate chips
METHOD
1. Preheat oven to 220° Celsius. Grease a mini-muffin
tin.
2. Melt the butter and cool to room temperature.
3. Sift together the almond meal, cocoa powder, flour, salt
and sugar.
4. Stir the egg whites into the sifted mixture, then
gradually stir in the melted butter until smooth and fully incorporated.
5. Spoon batter into the prepared tin to about
three-quarters full. Scatter a few chocolate chips over the mini muffins.
6. Bake in preheated oven for 10 minutes, until slightly
puffed and springy to touch.
7. Remove from the oven and cool completely before removing
from the tin.
These were really quick and easy to make and super cute once cooked!
